Greens and Beans

(This is truly a "green" dish that you can serve all summer long!)
2 T. olive oil
1 chopped onion
2 cloves garlic, sliced
1/4 t. red pepper flakes
Salt and freshly ground black pepper
2 c. any greens (spinach, swiss chard, kale, romaine, …) washed, stems trimmed and chopped
1 (15- ounce) can cannellini beans, drained
3/4 c. vegetable or chicken stock
Heat olive oil over medium heat.
Add onion and garlic slices. Saute until tender about 3 minutes.
Add the red pepper flakes and salt and pepper; stir until fragrant.
Add the greens and let saute until it cooks down slightly.
Add the beans and the stock.
Cover and let cook for 10 minutes.
Note: I usually add more onions and garlic. I also toss with cooked pasta and a tasty cheese. Delicious!! Another way I like to eat this dish is to drop 2 or 4 eggs on the surface of the cooked greens, cover and let the eggs poach for about 3 to 5 minutes, depending how you like your eggs! What a treat!
