(A family favorite!)
Batter
Cooking Spray
1-3/4 cups all-purpose flour
2 envelopes RapidRise yeast
2 teaspoons sugar
1/2 teaspoon salt
3/4 cup very warm water (120°F to 130°F)
2 tablespoons olive oil
Topping
1/2 cup pizza sauce
favorite pizza toppings
2 cups shredded mozzarella cheese
Mix batter ingredients in a pre-sprayed 9-1/2-inch deep dish pie plate. (I like to mix the batter in a separate bowl and then proceed as directed.)
Spread pizza sauce evenly over batter.
Sprinkle with cheese.
Bake by placing in a COLD oven; set temperature to 350°F.
Bake for 30 minutes or until done.
Note: Do not use regular yeast. It must be a rapid or quick rise yeast. I use Fleischmann's RapidRise yeast. I top the sauce with green peppers, onions, garlic, and olives and then put on the cheese. Use whatever toppings you prefer.
